At certain times of year there are foods that make a rare appearance in the supermarkets and on the dinner tables. At Christmas time we see all kinds of things that end up in our shopping baskets when we couldn’t even consider buying them at other times of year. It might be chestnuts ready to roast, it could be turkey or it might be cranberries.
They’re a fruit that divides opinion because it’s not one of the mainstream fruits, as such, it’s more of a luxury; yet we drink litres of the stuff every year in the form of juice. At Christmas, we have a number of different uses for it and not just in the form of sauce to go on the table as part of the accompaniments with your dinner. The sloe festive fizz is made from 2 tablespoons of cranberry juice, 50ml of sloe gin, 150ml of pressed apple juice, one teaspoon of caster sugar and some juice from a fresh lime – all ingredients that you can buy easily at this time of year from a supermarket. Mix all of the ingredients together and serve with plenty of ice, it’s the ideal cocktail to serve at a Christmas party or when you’ve got a few friends or family members round during the holiday season.
Stuffing comes in a number of different forms, with the most famous being sage and onion without a doubt, but cranberries can even be used here in the form of the popular side dish. Sausage, cranberry and port stuffing is ideal to serve with the turkey this Christmas, making the most of all the ingredients you would be buying for the dinner anyway! All you do is soak the cranberries in the port for around an hour, cook the meat and then add the port-soaked cranberries to the mix along with some eggs to form a thick paste and you’re about there. Easy peasy!
Of course, you’re going to want them to form a cranberry sauce at the dinner table and there’s a great modern twist that comes in the form of cranberry and Cumberland sauce that combines some great citrus flavours. It’s always better if you make something yourself, so give it a go!
